On this day 10 years ago, our mash tun received its first 2.5 tonne load of malted barley and fresh spring water. This created our first batch of sugary worts, ready for fermentation in one of our 12,000 litre Oregon Pine washbacks.

Today we completed our last cask filling of 2024, consisting of 48 ex-bourbon casks, ready for maturation in our warehouse. If you add that to the rest of our 2024 filling days that’s, 667,700 bulk litres filled into over 3,100 casks, and around 40 different cask types.

Early this morning, our production team completed the first mash of 2025. After milling 2.5 tonnes of unpeated malted barley, our mashman, Grant, added the milled barley to our mash tun to create 12,000L of worts; now fermenting in our washbacks until Thursday's distillation 🥃
