Flash Détente thermovinification heats the grapes to short of pasteurization point before a vacuum chamber that flash cools them in seconds. The process explodes the vacuoles in the skins of the grapes, extracting nearly 100% color and tannin. #txwine #flashdetente

4. 2015 Cabernet Sauvignon notes FL for “flash”. Those extracted tannins are well suited to handle the 100% New American oak (Dr. Bob is a Kentucky native). It’s a component. Not the star. That would be the fruit.

2/2 #txwine The wines were made by Pedernales Cellars, Bending Branch Winery and CALAIS Winery. That was a special day!! Then we took a field trip to Bending Branch Winery and heard a lecture by Dr. Bob. So memorable. Changed my mind about Texas Cabernet Sauvignon.
