Today we saw many great talks on microbial interactions at #microbialfoods by Benjamin Wolfe Rachel J Dutton Kiran Raosaheb Patil Matthias Hülsmann and others.


Manganese has a major, redox mediated impact on acidification, culturability and volatile metabolite formation of non-growing lactococci. This might be applicable to environmental conditions and dairy fermentation. Herwig Bachmann journals.asm.org/doi/10.1128/spā¦
