BETTER FOR YOU BARBI ADVICE No.3 SAUSAGE TO SWORDFISH There's been a major change in BBQ'ed food with a swordfish steak as likely to be served as a sausage & a brochette as a burger. We’ve become a nation of foodies & nowhere more than on the BBQ, where gastro-grilling now rules.

BBQ Advice No.4 Prep or Not? Proper preparation is key, with lighter more ‘au natural’ styles & no heavy sauces or accompaniments. Marinating is important, use olive oil, balsamic vinegars, plus garlic and chilies - healthy & also enhances taste. nationalbbqweek.co.uk

BBQ Safety Tip 3 - Using a gas BBQ, ensure grill lights immediately. If not lit at 2nd attempt, turn gas off leave for few minutes & retry using auto-ignition, flame wand or cooks matches. If using a hooded BBQ leave lid open to allow any gas to disperse. nationalbbqweek.co.uk

PRESENTATION TIP - COLOURS BBQ’s look great with a mix of colours, bell peppers look & taste great & flame-roasted to increase flavour, once skin has blackened, place in a plastic bag, allow to cool then remove skin. Courgettes grill well so do chillies asparagus & aubergine.

BBQ ADVICE No.6 - FOODIE NOT FAST - BBQ’s are the antithesis of fast food, the choice & type of food is healthier & there's also the ‘chill & grill’ relaxed environment, plus BBQ food is consumed more slowly and not ‘on the hoof’, which aids digestion. nationalbbqweek.co.uk
