Raviolo of Kennet crayfish, sauce Nantua Renaissant. Delicate pasta work enclosing a pert crayfish tail reclining on fluffy salmon, scallop & crayfish mousse. The crayfish sauce told vivid tales of copious shells coaxed out of their intrinsic flavour, lots of butter, & time


Saddle & farçi (with plenty of assertive liver and a little foie gras wrapped cabbage and caul fat) of venison with root vegetables, cardamom & sauce Bigarade Renaissant. Some refined, technical cookery going on in the quiet leafy enclaves of Bagnor.
