Reuben and Rose Mattus, Polish-Jewish immigrants, founded Häagen Dazs in New York in 1961. Reuben invented the name to sound Danish, honoring Denmark’s rescue of Jews during WWII.

During the First Jewish War (66–70 CE), rebels minted coins inscribed “Year One of the Redemption of Zion.” These coins were later found in Italy and even Britain likely brought back by Roman soldiers as war spoils after the destruction of the Second Temple.

Bagels have deep Jewish roots originating with Ashkenazi Jews in Poland in the 1600s. Boiled then baked, they were sold by street vendors and became a staple. Immigrants brought them to NYC in the early 1900s, where bagels became a beloved symbol of Jewish American culture.

In May of 1902, kosher meat prices leapt from 12¢ to 18¢ per pound, an increase that sparked outrage in the immigrant Jewish community. Thousands of Jewish women organized and executed a direct boycott on May 15, 1902, it became known as the meat riots.

Founded in 1917, the Jewish Welfare Board supported Jewish soldiers in WWI with religious services and community care. In 1918, it also promoted war bonds, rallying Jewish Americans to back the U.S. war effort financially and show patriotic solidarity.
