Subtle in aroma and mild in acidity, Silvaner wines go well with rustic country cooking as well as more elegant cuisine. Silvaner is the offspring of a natural crossing of Savagnin and Österreichisch Weiss – literally, Austrian white.

Reduction is the opposite of oxidation. A "reductive" wine may seem lacking in fruit or have an odd smell reminiscent of matches or toasted cereal. If you find these smells in your wine, pour it into a flared decanter and let it sit for 30 minutes to an hour.

Worried about the sugar level in some German wines? Did you know that a glass (150 ml) of Kabinett Riesling from Moselle contains around 6 grams of sugar. That's half as much as a glass of orange juice ...

Here's a simple tip for better wine and food pairings: avoid serving late harvest wines at the beginning of the meal. Sugar often saturates the taste buds.

Silvaner is so food friendly. Depending on the origin and type of vinification, it also goes hand in hand with shellfish and freshwater fish, as well as with spring classics like asparagus.

Spätburgunder (pinot noir) was brought to the Rheingau region in the Middle Ages by the Cistercians, almost at the same time as they were founding the famous Clos Vougeot, in Burgundy.

Red wines are composed of a variable concentration of tannins. These polyphenols, which come mainly from the skin and seeds of the grapes, give red wines their texture and structure.

"Attack!" Definition in wine jargon : wine professionals us the word attack to described the taste impression they first get when a wine touches their palate. The attack is followed by the “mid-palate”, and then the “finish”.

This holiday, give Santa a glass of milk. But for yourself, enjoy a sweet Riesling “Auslese” with your gingerbread cookies. Auslese is a late harvest Rieslings with notes of honey and apricot that complement the unique spices of the beloved holiday cookies.

Sekt (German sparkling wines) are usually considered a great aperitive wine, however they are also great gastronomic wines. Sekts have a special affinity with anything fat and salty – like plain crisps! Cheers!

Here's a word to remember when you're playing scrabble with family and friends this holiday season: "ampelography" It's the science of identifying and describing grape varieties. *You're welcome! ;)

Germany is the world’s largest market for sparkling wine, locally named Sekt. German people drink about 20 % of the world's annual production – almost 400 million bottles yearly.
