What's inspiring about the 100-year old Yamamotoya chain is how it protects its "Nagoya" brand. They refuse to expand to Tokyo or outside the Nagoya area. Instead, they've expanded abroad! They're in Hong Kong now, and plan to expand to Indonesia as well.
