Created by Hemant, this koshimbir is inspired by his childhood memories of his mother’s resourcefulness, and her delicious chutneys and dishes made with vegetable peels and fruit rinds.

As the chef and menu-planner at Tamarindtree Hemant is always looking to create dishes that are nutritious and tasty for the school students.

Tamarindtree This particular koshimbir, with the addition of roasted chana, was especially created to encourage protein consumption among the students, many of whom suffer from chronic undernutrition.

Tamarindtree But don’t let the simplicity of this koshimbir fool you! Aside from being packed with protein, the roasted chana adds an element of crunch to each bite and the bright, tart vinaigrette brings the whole dish together, making it the perfect summer delight!
